Olive Oil


John repacked the olive oil, which came in a rather large bottle, into smaller glass pint jars this afternoon. This increases the shelf life by about three months as we will now move the OO to the basement pantry where it stays a balmy 55-60F year round.

Ooo! I never thought of rejarring olive oil that comes in big containers. Great idea. Thanks!

I've been told NOT to use hot jars and lids as the person who told me this believes that this removes the oxygen from the jars and allows botulism to grow.

Thought I'd pass that one along.

Are you processing it in any way? If not, how would that prolong the shelf life? Hmmm....Curious...

Plastic bottles are very porous and allow air to come into contact with the oil causing it to oxidize faster.
